SARDINIA SOUTH TOURS TASTE OF DAVID PAULINE PREFACE
It 's a time track that undertaken for us by the famous gastronaut Davide Paolini through Sardinia in the south. Cibovagando, to use a term dear to him, visited villages, towns, rural areas experienced flavors and fragrances, browsing and creating for us a number of routes. With this transposition web we tried to keep intact as much as possible the spirit with which these tests a small diary, were written. The choice of photos and color is made with the aim to evoke the landscapes and the products mentioned, in order to recreate as much as possible, his experience. A journey that is good revive reading his impressions, but above all we hope it can serve as a stimulus to go over in person. good trip Davide Paolini
profound knowledge Food and lover of the wonders of our country, is the author of books and wine guides. For fifteen years working with the Sunday edition of Il Sole 24 Ore. Radio 24 has led to 'We like', and then devote himself entirely to the book 'Gastronauta'. south-west Sardinia SULCIS

Earth abrebaroi , or shamans, who for centuries have been passing on the art of healing with medicinal herbs and medicinal living beings, be they humans, animals or plants. This is the magic Sulcis , a region that takes its name from the ancient city of Sulci, signs of which remain on the island of S. Antioco.

The wine made from it stands out in a red wine with fruity and floral taste and a dry rosé.

Carbonia Carbonia
is a young city that has birth and name to the discovery of coal mine-Sirai Serbariu. Inaugurated in 1938 by Mussolini, the time of the brightest economic third of its 60 000 inhabitants found employment possibilities in mining. Remain in memory of those past housing for miners and backbone of a city plan designed according to the canons of fascist time. I find the same style theater, town hall,
the church, the tower Fascist and large fountains in the main square.

Colgo stralci di speeches in Genoa between the old men sitting on benches under the palm trees, I see typical wrought-iron balconies and hanging out on the menus of restaurants I read about couscous dishes. Finally I find an inscription in a public square that commemorates and explains the history of this curious fact in Sardinia. It is said that in 1738 Charles Emmanuel III granted the island to the descendants of a group of Ligurian originating Pegli who resided in Tabarka, Tunisia. '500 Sent there in order to exploit the rich coral reefs, more than two centuries after they were again reduced to slavery, the king thought it well to send them to St. Peter, the pirates to remove an important base of support. . . . . So in this enclave
Genoa I happen to enjoy a cuisine that makes the fusion of cultures and traditions of its strength: the Fainè chickpea sauce and pesto from Liguria are clear, the helmet of Arab origin (couscous) and pasta with campidana beans and spawning. The roe of tuna, sliced on bread or grated on pasta, is a delicacy that I let slip. Among the local pasta mention goes to Cassoli (dumplings similar to malloreddus) and raiêu (ravioli).
tabarkino After the feast, I leave the country and along the road salt, place of refuge for flamingoes. Then along the coast, between the rocks carved by wind and turquoise waters, discover beautiful beaches and coves wild and exotic. Cala Fico is at the heart of a protected LIPU, among the creeks and the Red Vinagra, protecting the Falco eleonorae that each year migrate from Madagascar and nests in the crevices of this rocky coast. The sea is full of valuable fish and tuna, most purchased from the Japanese. . . . .
in La Punta, on the northern island, is the trap. A sought-after fish this event is dedicated Girotonno, one of the most important cultural events and food and wine of the south-west of Sardinia, which is held in Carlisle in early summer. I also report the Festival of Couscous Tabarkini that promotes another typical dish of the island of San Pietro.

Sant'Antioco
Nella città di Sant'Antioco non manco a visit to wineries in Sardus Pater, whose wines originated from an ancient vine led perhaps by the Phoenicians in Sardinia. I taste the red and rosé Carignan and Muscat dessert.
these parts is the tradition of weaving fine linen, a natural marine fiber derived from the manufacture of filament obtained from the slime of the largest of the Mediterranean mussel, clam said.

Tratalias
Sant'Antioco from passing through the isthmus of the lagoon of S. Catherine to go back on the Big Island and, before arriving in the town of Tratalias crossing the Cathedral of Santa Maria, an example of Pisan Romanesque architecture dating back to 1213. Around the church are the remains of the ancient medieval village. Abandoned in the 70's, the town was rebuilt with a higher share due to the infiltration of water in the basin of Mount Pranu. Just outside the town, near a pine forest, visited the dam with the dam on the Rio Mannu, has created the artificial lake of Mount Pranu. On its banks is the village Nuraghe Nuraghe Is Meurras and a bastion of the same name formed by four towers, connected by a walkway, including one almost entirely on two floors.
In the surrounding fields are cultivated prickly artichokes, ingredients of different culinary preparations which give an intense and determined. But it 'sa trattalia' a traditional dish of these places: a stuffed goat or lamb gut with heart, liver, lung, spleen, and crispy roasted on the grill.
Santadi
before heading to the coast to the south, Santadi step, a farming town located among forests of oaks and Punic ruins, divided into two groups from Rio Mannu, and Santadi Basciu Santadi 'and Susu. The country is also one of the most important wine of the area and hosts the Cantina Sociale di Santadi, most famous for the production of Carignano Sulcis, full-bodied red that has obtained the designation of origin and was the winner of numerous national awards and international.
Each year in August is celebrated the 'Mauritanian Marriage', a beautiful wedding ceremony officiated in the traditional agro-pastoral. The bride and groom wearing traditional robes and climb up is traccas, adorned with flowers and the cart pulled by oxen, who leads them, followed by a procession of relatives and friends, the central square of the country of the rite. After the religious ceremony, the parents spread the spouses 'sa gratzia', rose petals, grains of wheat, grains of salt and coins while mothers grinding plates, all as a wish for happiness and prosperity .. . . .
6 km from Santadi Zuddas visit the caves, created by karst phenomena that have shaped the entire territory. I remain impressed by the spectacle that nature has set up here: salt aragonite, stalagmites, stalactites, and other lava formations created surreal scenes. Nearby is also the area of natural Gutturu Mannu, a ravine between the mountains of rugged beauty that borders the reserve of Monte Arcosu.

Porto Pino
take the SS293 in a southerly direction through Giba and point straight towards the coast. I expect the beach and lagoon of the Gulf of Palmas Porto Botte. An almost uncontaminated nature is at home to herons, flamingos, osprey, purple gallinules, piro-piro and ash.
up towards the hinterland and take the SS195 to Sant'Anna Arresi where right turn towards the sea. I expect the long white beaches of Porto Pino, with its dunes and lagoons, refuge of pink flamingos. The water is clear and iridescent colors. I take a path that winds through the Mediterranean to reach the reef Candiani, where the erosion of the rocks has created beautiful natural pools. In the area, on the promontory of Punta Menga, there is also a forest of Aleppo pines, a rare variety Syrian-Lebanese. According to legend, the pine forest has grown up a Phoenician city buried by sand. The Phoenicians probably planted pines on the coast of Porto Pino to obtain wood for boats.

Welsh Kilts Welsh Kilts?

in winter, a sea of culture: In the Temple of Antas

In Sulcis Iglesiente there are many things to do in winter. For example, go to discover the archaeological and cultural heritage of our land. Today we will see, in particular ...

ANTAS AND THE TEMPLE OF THE CITY 'OF METALS
Fluminimaggiore Pass, at kilometer 15.9 of the SS126, at the village of Sant'Angelo Iglesias, a deviation to the left along a road white door in the mining valley of Antas.
The valley is famous for the nearby forest was found the Temple of Antas, one of the most significant archaeological remains of the island . The temple was built by the Carthaginians in the sixth and fifth centuries BC . around a sacred rock Mail una cella del tempio.

Il tempio venne poi distrutto e riedificato nella forma attuale in Roman times, perhaps in the third century AD, when Caracalla reigned, as can be seen on the front. The inscription dedicated to the Emperor reads in part: "TEMPLE (um) DE SARDI Patris BAB ', the Sardinian- dedicated to the deity of the Roman Sardus Pater Babai, from whose name derives what you think of Sardinia. The Roman temple preserved the two side openings of the cell and the two Punic purification tanks hollowed in the floor in front of the entrances of the cell.

... inscriptions tell us that those who went to Antas to offer these valuable handicrafts were often public figures, and did not belong asking a favor. In at least three cases are quoted an official. In a written reports: the lord Sid Addir Babai, bronze statue dedicated imilkat, abshmun son, the son of bb Melkart, which belongs to the people of Caralis. It does not mean that it is a character of Cagliari in Semitic inscriptions, AM Caralis is in fact a public institution, perhaps a popular assembly or a religious corporation or, as stated Acquaro, AM is the popular assembly of citizens settled in Carthage different colonies. Indians lived in the colonies and sent from the capital, but the check was state by prefects sent from Carthage. Some members of the main families in the capital were sent on site to control the unfolding of activities of the various colonies, and according to this hypothesis, the AM Caralis would be the assembly of public officials Carthaginians. (by Pier Luigi Montalbano, online newspaper history and archeology - http://pierluigimontalbano.blogspot.com)

Fluminimaggiore - Metalla The ancient Roman quarries used for the construction of the temple. A short distance from the Temple of Antas was t the mining town of Metalla , ie 'Mines' , mentioned in the' Itinerarium Antonini, "an ancient Latin manuscript. This manuscript is described this way, which as of today's Castelsardo, continuing along the west coast of Sardinia until Sant'Antioco Sulki the old, in the south: the "way to Tibulas Sulcis. metal was a mining area where the Romans brought the prisoners sentenced to hard labor and extracted stones to build the Temple.
From Arbus take the SS126 south western Sardinia, and after 22 km we reach the town of Fluminimaggiore (name in Frùmini Majori, 58 meters, 3174 inhabitants), founded in 1704 by a local landowner for agricultural development of an isolated semi-desert territory the mountains are rich in vegetation. It has become an important mining center to mid-nineteenth century, and today is recovering its agricultural vocation associated with tourism.
we take another route into the woods and follow a path that will lead us, including spectacular views, to reach the caves Su Mannau. This cave system was formed by erosion due to the flow of two rivers that passed within it, is composed of two main branches. The left branch is about 300 meters long and is characterized by hanging lakes, the right branch extends for about 3.5 km. The first part of the right branch is about 50 meters long called Archaeological Room because within it are found many votive lamps dedicated to Tanit e al dio Taurus .

GROTTE SU MANNAU
Le antichissime popolazioni sardines on their way to the cave on Mannau to practice the cult of water, as noted above, attested by the discovery of several fragments of votive oil lamps. The hall of
Sonn or beside the Wall Lake, which is adorned with large columns, the hall Ribaldone hall is taller and wider, and the White room is full of aragonite stalagmites and columns, the room Virgin is characterized by white color determined by the river below and large stalactites and aragonite, the aragonite has coralloid Bizarre room and catheters, and finally, the show Abeti is adorned by sparkling crystals and stalagmites calcite. The siphon pipes and are hardly visible because it is often submerged.

The branch of the left, Placido originated from the river, is also characterized by the presence of huge halls, including the salon Rodriguez and Serra room, connected to the branch of the Infinite, and enriched by the beautiful cave pearls and by the beautiful crystals in the upper branches.
... Magic!

Sulcis Iglesiente Christmas ... various

Traditions and curiosity 'sardines ...

In Sardinia once a year did not start with the month of January, but with September, which is why it was called Cabudanni , ie New Year, coinciding with the beginning of the agricultural work. This way of counting time was introduced by the Byzantines who had adopted a timetable similar to that of the Jews.

The recurrence of January 1, however, is characterized by the use of the application of the "Donum Calendarium ", which is made by a group of friends who go to the homes of relatives and acquaintances with songs to announce the arrival the new year.

And for the sweet ? Christmas Lunch here is always enriched with nougat and mostaccioli guefos (almond paste covered in sugar).

Christmas in Sardinia - inland
from an article by Romano Asuni

as it may seem strange for an island, Sardinia is a land of land that has nothing to do with the image costasmeraldina of it was in the summer and that just belongs to the last forty 'years of the history of the island. You can go there once at Christmas, in the countries of the Interior, when the north wind cut his face out of the chimneys and the smell of burning juniper or mastic or almond trees. Here begins the diversity of an island that many have experienced but few really know, much less if they have met its obligations in holiday rituals. Christmas in Sardinia is something that is not Furthermore, a wind and sound of bells belonging to an ancient people survived even to himself, as well as those coming from the sea. The sea is distant, even if it is beating the door, and it is rare, if not the poorest in homes or in the few coastal towns that lacked a table set on a piece of lamb. Nothing to do, absolutely nothing, with the lambs that are now passed off as Christmas dish. I know it's an issue that will wrinkle their noses at more than one animal, (all right if it does curl! Ed) but the link was born in a land where the lamb was then friend and nutrients, often survival. (...) Earth's land, they said. At Christmas, if it happens a sunny day, you know better. Just come back every now and then.

THE TRADITION OF BREAD AND CONTRA

The art and the importance of bread in Sardinia
always been the bread was the basic food of the power of our lands, as well as many other Mediterranean peoples; but here in Sardinia, the cycle of domestic bread-making occurs in a much more significant and important in your family routine than elsewhere. The milling of cereals
Before the spread of a dense network of public mills electric, which occurred between the two world wars, two systems were basically used for grinding: grinding wheel Asinari, ancient Roman variant of the wheel, found throughout the island at the domestic level, but especially in areas of the South, and water mills introduced in the Middle Ages.
The famous bread carasau until the fifties of the twentieth century was the bread of routine use of the well-off families, those of reduced to the alternative consumption of barley bread and cheaper bread (chivàrju) , primarily intended servitude. Being a 'domestic group activities, baking required the constant presence of at least three women.
The barley bread especially in the area of Nuoro, was the very ' efforts involving this type of bread. As the result is a nutritious and tasty bread, this is not repaid all the effort made e. .. not quenched as wheat bread!
civràxu ITanti Bread loaves were made and the most curious shapes in not only regional but your locale, from country to country. The multiplicity of types is also linked to the use primarily of wheat flour, barley flour secondly, and finally ground to other grains and even acorns.

MORE ON MUSICIANS

The Quartet "SANDSTONE"

SANDSTONE was born in Cagliari in the fall of 2006. It consists of four instruments: accordion, two guitars and bass. The sound of their music reflect different individual music tracks, ranging from ethnic to rock, from jazz to fusion without neglecting the experiences in the so-called Read some of them. Contamination between different musical genres and the different artistic expressions: music, theater, poetry and graphic arts. So: collaborations with artists working in these functions.

Sandstone is formed by: Alberto Susnik, guitar, composition, voice Luigi Lai, Accordion, Composition Paolo Mereu, Guitar, Composition Matteo Marongiu, Bass, Composition

Marganai The forest falls within part of the project "Natural Park of Monte Linas, Marganai-Oridda, Montimannu" regarded as scenic areas under the Legislative Decree 490/1999 (formerly L 1497/39), Art. 139 and 146. North Marganai compendium of about 450 ha, is included in the Site of Community Importance (SCI) Monte Linas under Presidential Decree No. 357, 08/09/1997 transposing the Habitats Directive 92/43/EEC "on the conservation of natural habitats, flora and fauna, for the preservation of biodiversity. Within the forest, always in accordance with LR 31/89 is identified as an area of great naturalistic interest the area of the Cave of St. John, a majestic monument that is one of the largest cavity sardines. A real cave-tunnel traversed by a road that runs parallel to the Rio Sa Duchessa under a high limestone cliff where numerous archaeological remains are found, likely remnants of cyclopean walls.

(In the Forest of Marganai also home to the helicopter base of the same name which has a logistical role important in the context of the Regional Plan for the Defence of summer fires.)

The forest is an important destination for tourists and scholars, and You can visit following numerous paths and trails, many of which are extremely suggestive. And 'this a guesthouse, is currently not operational.

tours are possible even at the botanical garden, made for scientific-educational, which is represented the immense wealth of flora in this area is rich . Marganai is in fact a laboratory study and monitoring of forest ecosystems Mediterranean.
held here for ten years continuously extensive investigations on the vegetation, the condition of the hair, the chemical content of leaves and soil, changes in the growth of trees, atmospheric deposition, climate and microclimate, ozone and biodiversity.

From the geomorphological point of view is represented by a massive forest that are followed with rugged peaks and troubled, especially in the northern area is very hilly with broad expanses of rock outcrops.
The rivers are mostly seasonal flow, the main ones are Sarmentus Riu, Riu Sa Duchessa, Riu Oridda. The catchment area is that of Flumini Mannu. The altitude varies from 214 m to 1009 m asl (Monte Nipis).

Vegetation
The territory in question is part of the climax forest of oak and suffers from excessive human pressure is with repeated fires with pasture. These events have helped to create secondary scrub formations, cisteti and scrubland. Attempts have been numerous reforestation using species of the genus Pinus. The few patches of holm oak in the area are attributable to the association of Viburnum-Quecetum ilicis: This training mesic with sporadic presence of arbutus and massive entrance of sclerophyllous termoxerofile lower horizon. Very large artificial afforestation are made from 1914 mainly with conifers (pine, Aleppo pine and radiata pine), have recently been used also deciduous trees (oak, cork and oak). The undergrowth is almost sempre formato da elementi della macchia a oleastro (Olea europaea var. sylvestris) e lentischio.
In the north east of the forest, plain Oridda, was the subject of experimentation in the area of plantations for wood production and carried out by the group deleted SAFSpA National Agency for the pulp and paper (ENCC). The forest of
Marganai is full of many wildlife species such as the boar (Sus scrofa), wild cat, peregrine falcon (Falco peregrinus) and so on. Some areas may be considered suitable for the reintroduction of the Corsican red deer (Cervus elaphus corsicanus) and mouflon (Ovis ammon musimon). The presence of different animal species, has meant that this forest has a highly valued natural environment. Furthermore the area of forest Marganai is also patronized by the royal eagle.
The flora is both rich in species, with a significant number of endemic flora, which has been preserved for geological clear distinction with the surrounding territories. To get
